Asian Mint and Chicken Salad

Dressing:
1 1/2 TBSP vegetable oil
1 1/2 TBSP rice vinegar
1 clove garlic, minced
1 TBSP white sugar
1 jalapeƱo minced and seeded
1/2 onion, sliced thin
juice of 1/2 lime

Salad:
1/2 head of cabbage, shredded
2 carrots, shredded
3/4 cup of chopped fresh mint
1/2 cup of cooked chicken, chopped 1. Mix dressing ingredients.

2. Combine salad ingredients, and toss with dressing.
